Healthier “m&m” Gluten-Free Cookie Recipe
These healthier, chewy “m&m”-type cookies are not only delicious, but they are gluten-free and dairy-free! This is a recipe that uses clean ingredients like almond flour and coconut sugar to make up the batter. BUT it definitely doesn’t skimp out on flavor or sweetness!
Soooo, I may be extremely bold to say that M&M cookies are the best out there…
Anyone agree? There is just something so different and so special about making M&M cookies!
Now that I’m really into clean eating and clean baking, I wanted to come up with a recipe that was a healthier, modified version of one of my favorites. BUT this recipe could NOT miss out on flavor or sweetness–it is a non-negotiable!!
With each bite, you’ll get a chewy consistency, a tasty flavor profile, and an extra crunch from the “m&m’s”.
This recipe was created in my kitchen, as I was testing a tasty gluten-free chocolate chip cookie one (coming your way soon!). It just so happened that the week I perfected the recipe…was the week of my birthday! So to make these cookies even MORE fun, I opted to add healthy “m&m’s” instead of chocolate chips. This was a HIT with all of my roommates, and the colors made the cookies FUN, FESTIVE, and even more delicious!!
There’s no specific time of day when you can enjoy these cookies, either. I know me AND my roommates have had one with breakfast, alongside a nice smoothie or yogurt bowl…and there is NO SHAME in that!! They are made with clean gluten-free and dairy-free ingredients, that will leave your stomach feeling good after you have one!
How to Make a “healthier m&m” Cookie
If you have 25 mins to spare, a baking sheet, and a mixing bowl–you can TOTALLY whip this up in no time!
In a large mixing bowl–mix together egg, coconut sugar, coconut oil, honey, and vanilla. Now, sift in the almond flour and gluten-free flour blend. Throw in the baking powder, sea salt, then fold in those healthy m&m’s!!
Roll the batter into evenly shaped balls and press/flatten them on a lined baking sheet.
Bake at 365 F for about 15 mins.
How to Store these Cookies
Good LUCK getting these delicious, healthy gluten-free m&m cookies to last in your house for more than just a few days!
For storage, make sure to keep them in an air-tight container for up to 5-6 days. You can also store in the fridge for 7-8 days.
You can actually make this batter into edible cookie dough, just omit the egg, and use softened coconut oil instead of melted coconut oil. Roll the batter into balls and store in the freezer in an air-tight container. The possibilities are truly endless with this recipe! 🙂
