Soooo, although I may have stated in my healthy “m&m” cookie recipe that M&M cookies are my favorite, BUT these cookies are my go-to sweet staple.
If you have some chocolate chips in your house right now…you NEED to make these. I mean, how can you NOT have chocolate chips in your pantry at all times?!
Anyone relate? If I don’t have chocolate chips in my house…I go RUN for more.
Now that I’m really into clean eating and clean baking, I wanted to come up with a recipe that was a healthier, modified version of one of my favorites. BUT this recipe could NOT miss out on flavor or sweetness–it is a non-negotiable!!
With each bite, you’ll get a chewy consistency, a tasty flavor profile, and a classic hint of dark chocolate 🙂
This recipe was created in my kitchen, and I messed with the ratios for a WHILE. I tried different flours, different amounts, etc. until I created the best one. Once I mastered it, I tried it again. And again. Needless to say, my roommates were LOVING IT. This was a HIT with all of my roommates, and each time I made them they were even more delicious!!
There’s no specific time of day when you can enjoy these cookies, either. I know me AND my roommates have had one with breakfast, alongside a nice smoothie or yogurt bowl…and there is NO SHAME in that!! They are made with clean gluten-free and dairy-free ingredients, that will leave your stomach feeling good after you have one!
How to Make the Best Choc Chip Cookie Recipe
If you have 25 mins to spare, a baking sheet, and a mixing bowl–you can TOTALLY whip this up in no time!
In a large mixing bowl–mix together egg, coconut sugar, coconut oil, honey, and vanilla. Once that is mixed, sift in the almond flour and gluten-free flour blend. Throw in the baking powder, sea salt, then fold in those healthy choc chips!!
Roll the batter into evenly shaped balls and press/flatten them on a lined baking sheet.
Bake at 365 F for about 15 mins. *
*may need to adjust baking time, my oven is WEAK SAUCE!
How to Store These Cookies
Just like I stated with my healthy m&m gluten-free cookies…Good LUCK getting these delicious, healthy choc chip cookies to last in your house for more than just a few days!
If you do plan on storing these, make sure to keep them in an air-tight container for up to 5 days, or store in the fridge for 7-8 days.
You can actually make this batter into edible cookie dough, just omit the egg, and use softened coconut oil instead of melted coconut oil. Roll the batter into balls and store in the freezer in an air-tight container. The possibilities are truly endless with this recipe! 🙂
